Cryofast SL 147 consists of selected strain of Lactococcus lactis ssp. lactis bacteriocin-producing. Cryofast SL 147 is a protective culture inhibiting Clostridium spp. and so inhibiting butyric fermentation in cheese when used as adjunct culture and growing as secondary flora or NSLAB in cheese. Cryofast SL 147 might be used in combination with other Cryofast cultures by the dairy industry for the manufacture and ripening of cheese and fermented milks.
