Lyofast FPR 2 consists of Enterococcus faecium, Lactobacillus plantarum, and Lactobacillus rhamnosus in the ratio 1:1:1. Lyofast FPR 2 is a protective culture inhibiting unwanted yeasts and moulds development. Lyofast FPR 2 may be applied in dairy products such as e.g. fermented milk products and cheese. The culture may develop a weak acidity and aroma from slow citrate fermentation depending on processing.
