Lyofast MW 030 R consists of specifically selected strains of Leuconostoc spp., Lactococcus lactis ssp. lactis, Lactococcus lactis ssp. cremoris, and Lactococcus lactis ssp. lactis biovar. diacetylactis. Lyofast MW 030 R ensures a uniform and controlled production of fermented milk, buttermilk, sour cream, soft and fresh cheese (like i.e. Quark). Moreover Lyofast MW 030 R can be used in the production of both blue mould cheese and semi-hard cheese with round eyes (like i.e. Danbo, Swiss Tilsit). Lyofast MW 030 R ensures a fast citrate fermentation.
