Lyofast ST 020 consists of specifically selected strains of mild and relatively fast Streptococcus thermophilus. Lyofast ST 020 ensures a uniform and controlled production of soft cheese (resembling Crescenza or Brie), and of hard cheese (resembling Emmental or Grana). Lyofast ST 020 might also be used in the production of fermented milk products such as mild Laban and yoghurt.
