Lyofast ST 338 consists of specifically selected strain of fast fermenting and EPS producing Streptococcus thermophilus strain to ensure a uniform and controlled production of mild fermented milk or sour cream with high viscosity (i.e. ryazhenka, and smetana). Lyofast ST 338 can also be used for production of fresh and soft cheese and in blends for yoghurt as well as in other dairy products.
