Lyofast ST 442 consists of specifically selected strains of fast fermenting Streptococcus thermophilus producing EPS. Lyofast ST 442 ensures a uniform and controlled production of mild fermented milk or sour cream with high viscosity. Lyofast ST 442 can be also used in the production of fresh and soft cheese. Furthermore it might be used, in combination with other cultures, in the production of yoghurt as well as in other dairy products.
