SC 2
SC 2 is a yeast culture consisting of a selected strain of Saccharomyces bayanus. The culture ensures a controlled development of CO2. SC 2 can be applied in the production of fermented milk products such as Kefir. Moreover SC 2 can be applied in the production of blue mould cheese, like Gorgonzola, or in the production of cheese curd.
