4Protection is a Sacco line of lactic acid bacteria to protect products from the development of unwanted microorganisms. 4Protection cultures are composed of 100% natural lactic acid bacteria that help to maintain the structural and sensory properties of products throughout their shelf life.

Created on the basis of extensive experience in the milk and dairy industry, Sacco System has developed specific lines of lactic acid bacteria for natural protection of hypo-allergenic plant-based products, naturally hypo-allergenic products and no-GMO products.

4Protection lactic acid bacteria are suitable for hypo-allergenic products deriving from every plant type (soya, lupin, pea, chickpea, peanut, almond, oat, rice) and act against the development of unwanted yeasts and moulds, maintaining the original flavour, aroma and texture of the product.
