PDO (protected designation of origin) is a classification assigned by the European Union to foods with particular qualitative characteristics that essentially or exclusively depend on the area in which they are produced and the specific nature of the production process.
The geographic environment includes both natural factors such as climate and other environmental characteristics, and human factors such as production techniques passed down over the years and artisan skills, which combine for a product that cannot be reproduced outside a specific area of production.
For a product to receive PDO classification, production, transformation and processing phases must take place within the specific geographic area.
