AN 9
AN 9 consists of a selected strain of Arthrobacter nicotinae which can be used for surface ripening of semi-hard cheese. AN 9 cultures gives a cream-yellow colour. It grows fast, it has high salt tolerance, medium acidity tolerance, and low proteolytic and lipolytic activity.
