BZ 02 is a freeze-dried semi-direct culture for liquid starter preparation (bulk starter). It consists of selected strains of Streptococcus thermophilus, and Lactobacillus delbrueckii ssp. bulgaricus. BZ 02 ensures a uniform and controlled production of soft cheese (resembling Crescenza o Brie) and fresh cheese. The culture might be used in the production of yogurt too.
