CIPL consists of a selected strain of Lactobacillus plantarum producing bacteriocins. CIPL is a protective culture inhibiting unwanted bacteria, like Listeria monocytogenes and generally Listeria spp. CIPL can be used in the production of fresh cheese, soft cheese, semi-hard cheese, hard cheese. The culture might be used as surface treatment of cheese.
