Cryofast M 331 R consists of selected strains of Lactococcus lactis ssp. cremoris, Lactococcus lactis ssp. lactis biovar. diacetylactis, and Leuconostoc ssp. Cryofast M 331 R ensures a uniform and controlled production of e.g. fermented milk, mesophilic fermented milk like viili, and cream products. Cryofast M 331 R might be also used in the production of fresh cheese, soft cheese and semi-hard cheese. Cryofast M 331 R has citrate fermentation to produce diacetyl aroma and EPS production to increase the creaminess of the product.
