Cryofast M 439 N consists of undefined mesophilic strains of Lactococcus lactis ssp. cremoris, Lactococcus lactis ssp. lactis, and selected strains Lactococcus lactis ssp. lactis biovar. diacetylactis, and Leuconostoc ssp. Cryofast M 439 N ensures a uniform and controlled production of e.g. fermented milk, mesophilic fermented milk like Viili, cream products and fermented cream products. Cryofast M 439 N might be also used in the production of soft cheese and semi-hard cheese (continental cheese type with round eyes like Swiss Tilsit). Cryofast M 439 N has citrate fermentation to produce diacetyl aroma and EPS production to increase the creaminess of the product.
