Cryofast MW 039 N consists of undefined strains of Lactococcus lactis ssp. lactis, Lactococcus lactis ssp. cremoris, and selected strains of Leuconostoc ssp. and Lactococcus lactis ssp. lactis biovar. diacetylactis. Cryofast MW 039 N ensures a uniform and controlled production of sour cream like Smetana, fermented milk, fresh cheese, soft cheese, and semi-hard cheese. Moreover Cryofast MW 039 N can be used in the production of semi hard round eyed cheese, and fermented milk products like set crème fraiche, where not too fast and high gas formation is wanted. Cryofast MW 039 N has medium-fast citrate fermentation.
