Cryofast ST 023 A consist of specifically selected strains of mild Streptococcus thermophilus. Cryofast ST 023 A ensures a uniform and controlled production of soft cheese (resembling Crescenza or Brie) and hard cheese (resembling Emmenthal or Grana). Cryofast ST 023 A might also be used in the production of fermented milk products such as mild Laban and yoghurt.
