Cryofast ST 026 consist of specifically selected strains of mild Streptococcus thermophilus. Cryofast ST 026 ensures a uniform and controlled production of soft cheese (resembling Crescenza or Brie) and hard cheese (resembling Emmental or Grana). Cryofast ST 026 might also be used in the production of fermented milk products such as mild Laban and yoghurt.
