Cryofast Y 128 A consists of specifically selected strains of Streptococcus thermophilus producing a small quantity of EPS and low content of Lactobacillus delbrueckii ssp. bulgaricus. Cryofast Y 128 A ensures a uniform and controlled production of very mild fermented milk products with low viscosity. Furthermore Cryofast Y 128 A might be used in the production of fresh cheese, soft and cream cheese.
