Cryofast Y 359 A consists of specifically selected strains of Streptococcus thermophilus producing EPS and low content of Lactobacillus delbrueckii ssp. bulgaricus. Cryofast Y 359 A ensures a uniform and controlled production of mild set and stirred yoghurt with medium high viscosity. Cryofast Y 359 A is especially designed for production of very mild set yoghurt with very fast fermentation and firm set not acidifying very low and not giving much post-acidification.
