LF IDC consists of specifically selected blend of Lactococcus lactis ssp. lactis, Lactococcus lactis ssp. cremoris, Lactococcus lactis ssp. lactis biovar. diacetylactis, Leuconostoc spp., and Streptococcus thermophilus producing EPS. LF IDC ensures a uniform and controlled production of fermented milk, cream products, fresh cheese and soft cheese. LF IDC has citrate fermentation to produce diacetyl aroma and EPS production to increase the creaminess of the product.
