LFE 14 consists of selected strains of Lactococcus lactis ssp. lactis, Lactococcus lactis ssp. cremoris, Lactococcus lactis ssp. lactis biovar. diacetylactis, and Leuconostoc mesenteroides spp. cremoris. LFE 14 ensures a uniform and controlled production of fresh cheese, soft cheese, and semi-hard cheese. LFE 14 has citrate fermentation and produces diacetyl aroma.
