Lyocarni SOP-88 consists of Pediococcus acidilactici which ensures a uniform and controlled production of traditional fermented salami with added safety. Lyocarni SOP-88 is especially recommendable for processing at high temperatures but may also be applied as an additional culture if a stronger anti-listerial activity is requested at lower processing temperatures. Pediococci control the fermentation process and may result in mild acidity depending on the amount of fermentable sugar. Furthermore, it is a protective culture inhibiting e.g. Listeria monocytogenes.
