Lyocarni SXH-25 is a pure culture of Staphylococcus xylosus for enhancing formation of a stable colour, promote aroma formation and colour stability, and prevent rancidity. Lyocarni SXH-25 is recommendable for meat products in which an increased and more pronounced meaty flavour is requested. The culture may be added to meat products not applied lactic acid bacteria for acidification. The application range vary from whole muscles, spreadable products, salami produced with GdL, and salami produced without acidifying starter culture.
