Lyofast MT 092 FET is a bland of mesophilic and thermophilic cultures. It consists of specifically selected strains of Streptococcus thermophilus, Lactococcus lactis ssp. lactis, Lactococcus lactis ssp. lactis biovar. diacetylactis, Lactobacillus delbrueckii ssp. lactis, Lactobacillus helveticus, and Leuconostoc spp. Lyofast MT 092 FET can be used in semi-hard cheese with round eyes (like i.e. Danbo, Swiss Tilsit, Raclette etc.). Furthermore Lryofast MT 092 FET can be used in the production of hard cheese such as Swiss Emmental, Appenzeller, Gruyére or Greyerzer.
