Lyofast SE 2 consists of a specifically selected strain of Staphylococcus equorum to ensure a uniform and controlled surface treatment in the production of soft cheeses and helps to give a more controlled development of red smear, with faster colour development, and better inhibition of mould growth. Due to high proteolytic and high lipolytic activity the ripening and aroma of the cheese are enhanced as well.
