Lyofast ST 024 consists of specifically selected strains of mild Streptococcus thermophilus to ensure a uniform and controlled production of soft cheese, resembling Crescenza or Brie, and complementary in production of hard cheese, resembling Emmental or Grana. Lyofast ST 024 might also be used in the production of fermented milk products such as mild Laban and yoghurt.
