Lyofast ST 035 consists of specifically selected strains of mild Streptococcus thermophilus to ensure a uniform and controlled production of soft cheese resembling Crescenza or brie and hard cheese resembling Emmental or Grana. Lyofast ST 035 might also be used in the production of fermented milk products such as mild Laban and yoghurt.
