Lyofast ST 338 consists of specifically selected strains of fast fermenting and EPS producing Streptococcus thermophilus. Lyofast ST 338 ensures a uniform and controlled production of both mild fermented milk and sour cream with high viscosity (such as i.e. ryazhenka, and smetana). Lyofast ST 338 can be also used for fresh and soft cheese production. Furthermore Lyofast ST 338 can be used, in blends with other starter culture for yoghurt and other dairy products production.
