Lyofast Y 052 B consists of specifically selected strains of Streptococcus thermophilus, and Lactobacillus delbrueckii ssp. bulgaricus to ensure a uniform and controlled production of mild yoghurt. Lyofast Y 052 B might be used in the production of set yoghurt, drinking yoghurt such as Laban, and mild strained yoghurt like Labneh. Furthermore, Lyofast Y 052 B might be used in the production of fresh cheese, and cream cheese.
