MF 41 consists of selected strains of Lactococcus lactis ssp. lactis, Lactococcus lactis ssp. cremoris, Lactococcus lactis ssp. lactis biovar. diacetylactis and Streptococcus thermophilus. MF 41 ensures a uniform and controlled production of fresh cheese (like Quark), soft cheese and semi-hard cheese. MF 41 has citrate fermentation resulting in aroma and gas production.
