SCHLB is a yeast culture consisting of a selected strain of Saccharomyces cerevisiae. The culture ensures a controlled development of CO{sub {super {sub 2. SCHLB can be applied in the production of fermented milk products such as Kefir. Moreover SCHLB can be applied in the production of blue mould cheese, like Gorgonzola, or in the production of cheese curd.
