STAR IDC 13 consists of specifically selected strains of fast fermenting Streptococcus thermophilus and aromatic mesophilic strains of Lactococcus lactis ssp. lactis and Lactococcus lactis ssp. lactis biovar. diacetylactis. STAR IDC 13 ensures a uniform and controlled production of stretched cheese, like mozzarella, hard cheese and semi-hard cheese.
