LB BT2 consists of undefined strains of Lactococcus lactis ssp. cremoris and Lactococcus lactis ssp. lactis, added with defined strains of Lactococcus lactis ssp. lactis biovar. diacetylactis, and Lactococcus lactis ssp. cremoris. LB BT2 ensures a uniform and controlled production of fermented milk, fresh cheese, soft cheese, and semi-hard cheese with very low production of EPS.
