Lyocarni PRO-MIX 1 consists of Staphylococcus xylosus and heat treated staphylococci for enhanced aroma development, colour formation and stability, and preventing rancidity. Lyocarni PRO-MIX 1 is recommendable for meat products in which an increased and more pronounced meaty flavour is requested. The culture may be added to meat products not applied lactic acid bacteria for acidification. The application range vary from whole muscles, spreadable products, salami produced with GdL, and salami produced without acidifying starter culture.
