Cryofast M 333 R consists of selected strains of Leuconostoc ssp., Lactococcus lactis ssp. cremoris and Lactococcus lactis ssp. lactis biovar. diacetylactis. Cryofast M 333 R ensures a uniform and controlled production of fermented milk products (like e.g mesophilic fermented milk such as Viili), and cream products too. Cryofast M 333 R might be also used in the production of fresh cheese, soft cheese and semi-hard cheese. Cryofast M 333 R has citrate fermentation to produce diacetyl aroma and EPS production to increase the creaminess of the products.
