PM IDC 6 consists of specifically selected strains of mild and fast Streptococcus thermophilus to ensure a uniform and controlled production of soft cheese resembling Crescenza or Brie and hard cheese resembling Emmental or Grana. PM IDC 6 might also be used in the production of fermented milk products such as mild Laban and yoghurt.
