PR F
PR F is a liquid mould culture consisting of a single strain of bright light blue-grey Penicillium roqueforti. The use of this culture ensures a controlled, slow development of a pale blue-grey marbled characteristic appearance in pale blue cheeses. Due to very low proteolytic, medium lipolytic and high esterase activity during ripening the use of PR F is suitable for maturation and development of a piquant aroma in Gorgonzola dolce-like cheeses
