PR I is a liquid mould culture consisting of a single strain of bright light blue-grey Penicillium roqueforti. The use of this culture ensures a controlled, quite slow development of a pale blue-grey marbled characteristic appearance in pale blue cheeses. Due to low proteolytic, medium lipolytic and medium-high esterase activity during ripening, the use of PR I is suitable for maturation and development of a medium piquant aroma in blue cheese such as Gorgonzola dolce-like and other pale-blue veined cheeses
